Fun things to prepare at home and even more fun to eat !

Where there's always a hot pot of coffee on ready
for you with a fresh slice of
home made apple pie,
just like grandma used to make!

Yea, right! :P

To start off with here's one of lookat desktop's best recipes:

Piccalilli aka green tomato chow chow

Anthony's basic bologna sandwich:

Oro Wheat brand Oat nut bread, 2 slices
Tomato, Roma slices
Helman's mayonnaise spread on both slices.
Thick Bryan beef bologna
Coarse ground black pepper
Sea salt, sprinkled lightly
Iceberg lettuce, a few good leaves, be generous.

Cut the sandwich in half and serve with a slice of a Vlassic dill pickle.

Eat!  Repeat as necessary.

Anthony's favorite chili recipe:

Ground beef chuck: about 2 pounds.
Bell pepper: about 1 or 2, chopped up.
Pinto beans: as much as you want.
Onion: white, yellow, or vidalia: diced real nice. (about one onion is ok.)
Garlic: fresh, about 5 cloves, chopped real fine.
Chili powder: about 4 tablespoons.
Cumin: about half a teaspoon.
Salt: about two level teaspoons, (after the beef is already cooked and
drained and mixed with all the rest of the ingredients. )
Celery: about 3 sticks, diced up nice.
Canned stewed tomatoes: 2 cans.
Canned tomato sauce: 1 can.

Put on low flame and cook until all the ingredients are aromatic 
and you can't wait any longer to eat.
 

Usually it takes a good 45 minutes with a lid on top of the pot.
 
note: you can add kidney beans if you like. 
and don't forget the black pepper!


Banana Bites With Nuts And Chocolate:


Chill:
bananas, peal, and slice into normal one inch chunks. 

stand on a tray upright with a toothpick in each.
Dip
in chocolate shell dip and then in chopped peanuts.


Place them on a silver or glass serving platter 
and start munching immediately!

barbecue dogs:

Take a can of ranch style beans, heat 'em up in a pan on a low flame.
Then cut up several,
about a pack of ten hot dogs, Eckrich preferred.

add:
master piece original barbecue sauce, 

about half a bottle or more.
add:
diced white onion, about half of one, 

or vidalia (which ever is your favorite).
add:
black pepper, and also a little garlic, 

about half a teaspoon of garlic powder.
add:
as much Pace picante sauce as you think you need to add zip to it.

serve with crispy texas toast and cold sweet iced tea.

Tuna Sandwich Crunch:

One can tuna in water, mixed with:
several tablespoons of miracle
whip dressing.
Mix into bowl with crumbled potato chips.
add bread and a beverage...

whallah!

Broccoli Dip:

Not as it sounds exactly:
Raw broccoli: chilled,
Catalina dressing: chilled, in a cup.

Start dipping!

COFFEE IS AS COFFEE DOES!


One teaspoon: instant Folger's Coffee.
Two teaspoons: instant Nestle's chocolate quick.

Sprinkle cinnamon and blend well.
Add: one cap full of pure vanilla extract.

Serve hot with a table spoon of Cool Whip topping
Sprinkle a moderate amount of nutmeg on top.

ENJOY!

Puzzle Peanut Butter & Sugar Cookies:

Learn the states, one bite at a time!
lookat takes a bite out of geography homework.

Just start with the cookie dough. 

Make a flat sheet of dough for peanut butter cookies, 
or sugar cookies and using a template of the USA, 
cut the the states out, following carefully along the dotted lines 
that you drew yourself on butter tracing paper. separate and cook
them as you normally would do.

Once done,
remove them and place together piece by piece

until they form the USA on a large tray.

Using a cake decorator tube and your favorite icing, 
draw each state's name on each cookie. chill, 
then disassemble the pieces and 
let the kids have at it. 

They will either learn a lesson in geography or at least, 
enjoy the great taste of your home cooking.

FRUITY SALAD:

Fresh (or) frozen fruit mix (or) a little bit of both.

Example:
(strawberries, bananas, pear, peaches, pineapple, 
oranges and marshmallows.)
Mix:
COOL WHIP TOPPING

Add:
chopped pecans

Sprinkle:
chopped sweetened coconut on top of each serving if desired.

Place into refrigerator until fruit either chills if it is fresh, 
or until fruit thaws, if it is frozen.
Serve:
within a few days,  so it will be fresh and good.

The Best Banana Nut Bars On The Internet

Preheat oven to 350 degrees fht.
1 cup sugar - half teaspoon baking soda
1 cup bananas; (3 bananas) - half teaspoon cinnamon,
1 third  cup canola oil - a forth teaspoon salt
2 eggs - half cup copped, unsalted pecans
1 cup Gold Medal plain enriched flour, not self rising,
1 teaspoon  baking powder.

Bake 25 minutes - in 10 inch cake pan sprayed with Pam, 
and dusted lightly with flour.

Please Note:

Mix all dry ingredients first, then, add liquid ingredients, 
then mix together until well blended.

Simply the best!

Butter Almond Crunch:

3 - quarters cup -  almonds - sliced
3 - quarters cup -  coconut - sweet gratted
1 half -  cup - corn margarine
1 and one - half - cups - granulated sugar
3 tablespoons full water
1 tablespoon full  white corn syrup (Karo) brand preferably half
1 teaspoon salt

Use a 13 X 9 buttered cake pan,

Place the almonds and the coconut into the bottom of the pan.
Cook the rest of the ingredients to 290 degrees fht, 
until it reaches the soft crack stage, 
Remove from heat and pour evenly over the almonds and the coconut.

When cool, break into pieces and it's ready to eat.
Store uneaten portions in an air-tight covered container.

Makes about a pound of brittle candy.

Italian Casserole:

2 tablespoons full of olive oil, extra virgin
1 and 1 half pound of Ground Beef Chuck
1 medium sized onion, chopped, vidalia preferred
1 green bell pepper, cut into thin slices
1 half teaspoon full of garlic powder, not garlic salt
1 half teaspoon full of Italian seasoning mix
3 quarter teaspoon full of red pepper flakes
Salt and pepper to taste.
a cup spaghetti sauce, Bertolli preferred (with tomato, garlic and onion)
4 cups of cooked bow tie pasta
1 cup of mozzarella cheese for topping, optional.

Home made Chicken Pot Pie:

Preheat oven to 400 degrees fht.

1 package of (2) pie shells, frozen.
1 large can of cream of chicken soup, family size.
1 half of a box of frozen mixed vegetables.
1 can, whole potatoes cut into quarters, drained
1 large can of white breast meat chicken, drained.
In a two quart round casserole dish, place one of the pie crusts.
Next, in a bowl, toss the rest of the ingredients and 
add salt and pepper to taste.
Then, pour contents into casserole and cover 
with remaining pie shell with slits cut into it to let out steam.
Then, brush on margarine, already softened at room temperature.
Bake casserole aka baked Chicken Pot Pie, 
for approximately 45 minutes at 400 degrees fht, or until golden brown.

Serves 4, unless you have an appetite like Anthony, 
in which case serves only 2.

Dr. Pepper Cake:

Bake at 350 degrees for 30 minutes.

:>) 2 and one third cups flour
:>) 2 cups of granulated sugar
:>) 1 Teaspoon full Baking soda
:>) 1 cup of Dr. Pepper
:>) two thirds cup margarine
:>) 2 tablespoons of cocoa
:>) 2 eggs
:>) one half of a cup of buttermilk
:>) 2 teaspoons of vanilla extract
:>) 1 and one half of a cup mini marshmallows.  (Stir in just before baking)

  Frosting:

:>) one half cup of margarine aka (oleo)
:>) one fourth cup of cocoa
:>) one fourth cup of Dr. Pepper

Bring to a boil, then remove from heat, then stir in the following:

:>) 2 and one half cups of 10X powdered sugar
:>) one teaspoon full of vanilla
:>) one cup of chopped pecans.

spread on cake.

Remember!
Bake at 350 Degrees Fahrenheit for approx. 30 minutes.

Mississippi Mud Cake:

Beat together:

One cup butter or margarine
Two cups sugar, (ordinary granulated table sugar)
 
Add:

One half of a cup
of cocoa,

A dash of salt
4 eggs
One teaspoon vanilla
One and one half cups flour,  regular all purpose

Add:
 
2 cups or less of pecan pieces
.

BAKE: at 350 degrees fht. for about 35 minutes in a
13 X 9 X 2 inch rectangular cake pan.

When done, while it is hot:
spread on: one small jar of marshmallow creme so it melts over it.

NEXT:

(Instructions for icing)
Beat together:

One half of a cup butter or margarine
One third cup cocoa
One box of 10 X sugar (confectioner's sugar aka fine powdered sugar)
One half cup homogenized milk
One half teaspoon vanilla

SPREAD the above mixture
OVER the MARSHMALLOW CREME
IN A SWIRL
PATTERN TO LOOK LIKE MUD.

Optional:
 
You can add chopped pecans on top if you want, 
preferably more of those pecan pieces. :)

Breakfast Muffins:

2 cups flour
Half cup sugar
3 teaspoons Baking Powder
Half a teaspoon salt
Three quarters cup homogenized milk
3 tablespoons corn oil
1 large egg

Place into oil cups in center of each muffin.
 
You can add:
1 teaspoon Jam, either apricot or blackberry 
or strawberry or peach
Half a cup chopped pecans
Coconut goes in the muffins also.

Bake at 400 degrees for about 22 minutes.

Breakfast Burritos:

Warm your Tortillas, then start filling!

Fill with:

4 eggs, scrambled
1 diced tomato
1 half pound cooked sausage
1 large potato, hash browned
1 cup mozzarella cheese
1 half cup salsa

salt and pepper to taste.

Selva's Hot Wings Recipe :P
 
Three quarters cup of ....................Kraft Honey Spice Barbecue Sauce
Three tablespoons of .....................honey
One teaspoon of ............................minced Garlic
Two teaspoons of ...........................Louisiana Hot Sauce (has Ceyenne pepper)
1 half a teaspoon of .......................cumin
1 half a teaspoon of .......................ginger
The fresh squeezed juice of ...........one small lime
Two tablespoons of .........................butter
One quarter teaspoon of ................coriander
Salt and pepper to taste

Place all the above ingredients into a saucepan and 
simmer on a low flame for two to three minutes.

Take two pounds of chicken wings, (cut off tips and throw away)
Cut wings in two pieces.
Shake in a bag with flour to coat.
Fry in oil, until golden brown and done.
Pour off all oil from the saucepan then spoon sauce over wings to coat.

Ready to serve!

Java Central Notes to remember:

Coffee could be just a simple cup of black from a local stop and glow gas aisle.
But, come on!

Get real! If you like coffee you want to either get it at a Java cafe or do it at home.
At home I like to play around a little bit with my coffee.

1. I will make it fresh first, in an electric drip coffee maker.
2. Then, I will go find my basic ingredients, sugar, creamer, vanilla, nutmeg, mocha syrup, cool whip or vanilla iced cream, preferably a name brand like Dryers or Breyers or Borden. Hershey's chocolate syrup. caramel topping.
3. Think of what exactly you are in the mood for at the time and then go for it!

Now, you can't over do things with coffee.
For instance, too much sugar can make the coffee taste like it was made for
Marlin Brando as the Godfather,
drinking heavily sweet coffee from demitasse cups.
Not for the faint of heart or diabetic.

I go usually with the following measures:

1. One 12 ounce cup of fresh black coffee,
2. 2 level teaspoonful of light brown sugar.
3. 2 tablespoonful of cold regular homogenized vitamin D milk, or more per
taste, but don't make your coffee get cold by adding too much milk okay!
4. One tablespoonful of Nestle's chocolate quick mix.
5. One capful of pure vanilla, not imitation , please!
6. dollop a good amount of soft whipped cream, or cool whip topping.
7. Either sprinkle cinnamon in the coffee before hand or not, but instead,
sprinkle lightly, some nutmeg powder on the whipped topping.

Beyond that you be the judge. That's my recipe for super tasting Java.

My Favorite Sandwich:

You need some fresh bread to make my favorite sandwich.
You need some sliced smoked ham.
You also must have one or two slices of american cheese.

Spread Miracle Whip on both slices of bread.
add some sliced pimento filled green olives to taste, and sprinkle pepper.
 
Serve with iced Dr. Pepper, and barbecue potato chips, preferable Wavy Lays.
 
Repeat as necessary.

Serve spring onions on the side or offer an onion or bean
dip on the side. You now have one of lookat's favorite sandwiches. I sometimes
like to substitute milk for Dr. Pepper, and whole grain for white and add thin
sliced tomatoes. 

You can improvise if you want. enjoy!

Toast and Jam:

2 slices of bread, white, toasted in an electric toaster
good quality margarine, soft enough to spread evenly on toast bread
Goya brand Mango Jam
1 large glass of cold 1% milk.

repeat as necessary. :P

Banana on a hot dog bun:
 
1 banana, ripe and ready to eat
1 hot dog bun
Honey
Mayonnaise
Take the banana and split it down the middle end to end and
remove the strings that usually happen to hang on to it every time you peal them.

Spread mayonnaise on the inside of the hot dog bun.
Place banana slices in the bun, curving upwards.
Drizzle a nice amount of pure Burleson brand clover honey from Waxahachie, TX.
No other brand will do. 

Serve with cold 1% milk

Repeat as needed for the desired satisfaction.


Island Spice Banana Bread:

Three bananas
One cup brown sugar
Half cup soft margarine
Two eggs
One and a half teaspoon cinnamon
One quarter teaspoon nutmeg
One quarter teaspoon allspice
One half teaspoon banana extract
One half teaspoon salt
Two and a half cups flour
Two teaspoons baking powder
One quarter teaspoon baking soda
One half cup pineapple, dried bits
One half cup mango, dried bits
One half cup apricot, dried bits
One half cup coconut, sweetened, grated
Two tablespoons sugar, (for top before baking)

Bake at three hundred fifty degrees fht. for approximately one hour.

Chocolate Pancakes:
 
Two cups chocolate chips, melted
One third cup whipping cream, whisked in
One quarter cup soft margarine, whipped in.

Whip and cool and spread on cooled pancake.

Butter Coconut Cookies:
 
One cup sugar
Three quarter cup butter
One egg
One teaspoon vanilla
Two cups flour
One and one half teaspoons baking powder
One quarter teaspoon baking soda
One half cup coconut or toffee bits

Bake in conventional oven at 350 degrees fht for approximately 10 minutes.


Gingered Carrots:

 
One pound carrots
One teaspoon ground ginger
Three quarter cup orange juice from concentrate
One tablespoon brown sugar
One half teaspoon sugar
One teaspoon corn starch

Salt and pepper to taste.

Guacamole:
 
Two large dark and ripe sweet avocados
One tomato chopped
One half red onion chopped
One half cup cilantro chopped
One quarter teaspoon cayenne pepper
One quarter teaspoon cumin
Salt and pepper
Juice of one lime.

Chicken Egg Rolls:
 
Ingredients:
One package Egg roll wrappers
One half package Dole brand Cole Slaw Mix
One cup Tyson's brand chicken breast or freshly cooked and cut into small chunks.
Two whole green onions sliced into thin slices not diced.
Two tablespoons butter or margarine for sautéing.
One half cup canola oil for frying.


Preparation:
Sauté all in a frying pan until hot and crisp and tender.
Place two to three table spoons full in each egg roll wrapper.
Fold over ends and roll up tightly and then fry until golden brown on both sides.
Drain and then serve with sweet and sour sauce.


Skillet Okra and Tomatoes:
 
Ingredients:
Two slices bacon,  already fried crisp and
One tablespoon margarine
One small onion
Two cloves of garlic
Eight ounces cut okra,  about two cups
One half teaspoon salt
One half teaspoon black pepper
Four Roma tomatoes
Two teaspoons of lime juice
Two teaspoons of fresh basil

Preparation:
Crumble bacon for topping
Cut onion into wedges
Mince the garlic
Cut Roma tomatoes into wedges


Mexican Squash and Corn:

Ingredients:
Three tablespoons extra virgin olive oil
Three Zucchini squash,  sliced long ways
Three yellow squash,  sliced long ways
One large yellow onion,  chopped
One jalepeno pepper,  diced
Two cloves garlic,  minced
Two cups canned whole kernel corn
Salt and pepper

Preparation:
Slice Zucchini long ways
Slice Yellow squash long ways
Chop Yellow onion
Dice Jalepeno pepper
Mince garlic
Drain canned whole kernel corn fully
Cook in pan on top of stove until tender,  then
Pour into a buttered baking dish
Spread two cups of mozzarella cheese over top of dish before
placing it into an oven at 400 degrees fht.
Bake until cheese is melted.


Corn Fritters:

Ingredients:
One and one half cups whole corn from can
One egg
One half cup self rising flour
One half teaspoon baking powder
One third cup sour half and half cream
Add salt and pepper
One tablespoon fresh parsley
One Tablespoon fresh basil
One Tablespoon fresh chives
One quarter of a cup of canola oil
then add One tablespoon soft butter.

Preparation:
Fully drain corn
Fry in a skillet on a medium flame once oil is hot.
Turn over when golden on one side and then after both sides are golden brown
Serve hot


French Green Beans:

Ingredients:
Two tablespoons extra virgin olive oil
One large red onion
One half red pepper
One half yellow pepper
Add pepper and salt
One pound cooked green beans

Preparation:
Sauté extra virgin olive oil
Slice and dice large red onion
Dice red pepper
Dice yellow pepper
Add to and then toss the one pound of cooked green beans


Tacho: (half taco, half nacho)
(You can go either more with the taco as the main focus or the other way
with nachos as the main focus)

Taco as the Framework or base of the recipe for a Tacho/Taco or Nacho combination:

Ingredients:
Taco shells
Jalapeno pepper slices
Nacho cheese grated
Tomatoes
Lettuce
Onion diced

Preparation:
Prepare the ground beef like you normally do, draining it well, then mixing
the needed amount of taco seasoning,  but not too much spice.
Put the hot taco meat in the shell first then layer your favorite toppings.
Instead of grated cheddar cheese on top you may use melted nacho cheese from
Velveeta and rotel tomatoes mixed in with Jalepeno.

The next idea is to let the nacho be the main focus:

basically all you do is:
Nacho white or yellow corn tortilla chips as a base
Ground beef, lightly spiced with taco seasoning
Sprinkle ground cheddar cheese on top
Add diced white or vidalia onion and salsa


Fried Rolled Hamburgers

Ingredients:
Ground beef
Grated American cheese
Diced white onions

Preparation:
Flatten hamburger with a rolling pin, just right. Not too thin, but just enough.
Sprinkle on spice,  for example, pepper, salt and/or Canadian Steak Spice.
and sprinkle on the onions, cheese and a few jalepeno peppers if need be.
Roll the burger patty into a nice sausage shape full of goodness.
Pan fry this bad boy using it's own natural juices once done,  just lay it on paper towels and then use a skewer to poke down the center and then you can dip it in any sauces you like.

It's like a sausage on a stick using hamburger instead of sausage and it's full of your favorite toppings you normally use to make a burger on a bun, but without the lettuce and the tomato.

*note: You can half way cook it,  then drain it good, dip it in corn dog batter or tempura, and then deep fry the suckers for added calories.

Another way to do this is as follows:

Double Sirloin Burgers Topped With Provolone Cheese etc...

I like it like this:
2 ground sirloin  beef patties topped with Portabella mushrooms sliced
and sautéed in butter, and add a slice of red onion and slice of Provolone cheese.
On a Ciabatta bun. use the dressing of your choice,
*none for me, you can if you want,  maybe you can try thousand island dressing instead of mayo. Just a thought.



Piccalilli aka green tomato chow chow:
Recipe by: Mamma Davis

Ingredients:
One half cup salt
Four quarts green tomatoes,  chopped
Two quarts green cabbage,  shredded
Two cups red bell pepper,  diced
One cup chopped onion
One and a half cups sugar,  brown
Two tablespoons mustard seed
One tablespoon celery seed
One tablespoon horseradish
Four and one half cups yellow apple cider vinegar

Preparation:
Heat all above ingredients to a boil
Then place into clean mason jars and seal.
